Depression Pudding

From a time when candied fruit was expensive, but cranberries were free for the picking…





1 ½ c flour

¼ c corn syrup

¼ c molasses

2 t soda, dissolved into ½ c water

2 c whole cranberries (frozen ok, but makes batter stiff)


Combine all ingredients and steam 2 hours in pudding mold in large pot of water (or microwave at 80% for approximately 15 minutes, depending on MW – check periodically, a toothpick inserted into centre should come out clean.) Serve warm with sauce (see below). Can be made ahead and reheated in microwave.

Sauce: Put ¼ lb (1/2 c) butter in sauce pan with 1 c heavy cream over medium heat. When butter melted, stir in 1 c sugar, 1 t vanilla, 1 t cream of tartar. Bring to a boil and serve hot (and generously) over pudding.
