An El Camino Cake Recipe
AUNTY DONNA’S TARTA DE SANTIAGO (St James Cake) Donna’s favorite breakfast while doing a camino, available most Spanish bars; very easy and gluten free, what’s not to love? 250 g ground almonds 250 g sugar zest of 1 lemon ½ tsp cinnamon 5 eggs Combine first 4 ingredients, then add 5 beaten eggs. Bake in a greased 9” springform pan at 350 degrees for 50 minutes. Once cooled, sprinkle with icing sugar – the tradition would be over a stencil of St. James cross which you can easily cut out of paper.
